Easy Apple Cinnamon Muffins With Krafty Kashen

Everyone knows that two of my favorite foods are butter and sugar! These Easy Apple Cinnamon Muffins have just that, a lot of butter and a lot of sugar. But.. they also have apples so it makes it a little bit healthier. They are super easy to make! You only need a parents help with the oven and chopping the apples.

Here is what you will need to make these yummy muffins!

- 2 Medium Apples (We used Granny Smith)

- 1 Egg

- 2 Teaspoons Baking Powder

- 1/2 Cup Brown Sugar

- 3 Teaspoons Ground Cinnamon

- 1 1/8 Cup All Purpose Flour

- 1/2 Teaspoon Salt

- 3/4 Cup Granulated Sugar

- 1/2 Cup Whole Wheat Flour

- 1/3 Cup Coconut Oil

- 2 Tablespoons Butter

- 1/3 Cup of Milk

Step 1: Using a KitchenAid or hand mixer, mix together the whole wheat flour, all purpose flour, baking powder, brown sugar, cinnamon, salt, and sugar. Once blended, mix in the egg, coconut oil, butter, and milk.

Step 2: This is where it gets messy. Spread a teaspoon of coconut oil onto your hands, and then fold the apples into the batter. You can either peel the apples, or leave the skin on. We left the skin on.

Step 3: Scoop the batter into either a greased or lined muffin tin. We used super cute parchment liners.

Step 4: Preheat the oven to 400 degrees Fahrenheit. While the oven is preheating, make the muffin toppings. For this you will need:

- 4 Tablespoons Butter

- 1/4 Cup White Sugar

- 2 Tablespoons All Purpose Flour

- 1 Teaspoon Ground Cinnamon

To make the topping, whip the all of the ingredients together.

Next comes the fun part. Sprinkle the toppings over the tops of the muffins!

Don't, worry about spreading it out, the butter will melt while the muffins are baking! By now the oven should be done warming, so it is time to bake these muffins! They will take about 18-22 minutes!

To see if the muffins are done, you can poke them in the center with a toothpick. If it comes out clean they are done baking and ready to cool!

Ok, so I told you before that I love sugar so I couldn't help but throw some extra sugar in this recipe! While the muffins were still hot, I sprinkled some brown sugar over the top to make them a little extra special.

These Easy Apple Cinnamon Muffins are so good! The combination of butter, brown sugar, and green apples taste just like oatmeal! You have to make them and then let me know how they taste!
